Every morning starts early in the Sensitive House, Easter is no exception. It will be a fun-filled day with visitors, egg hunts, and festivities. We need to fuel up with a healthy and filling breakfast. _DIY Mug Omelets _ and _Bunny-cakes_ will help us fill up while still having some Easter fun.

More Sensitive Mommy Breakfast Ideas:

_DIY Mug Omelets_ are easy-peasy and mu little sous chef had a blast chopping the veggies, whisking the egg and popping them out of the mugs. captain surprised be by adding a ton of veggies to his omelet.  Parenting win!

  • Cutting board and Knife
  • Small dishes for buffet- we used re-useable baking cups.
  • Small bowl
  • Small whisk or fork
  • 1 mug per person

  • Various chopped veggies. We used carrots, spinach and red onion. Other good omelet veggies are broccoli, tomatoes, yellow onion, and potato.
  • Variety of diced break fast meats. We used bacon and ham, but sausage, Canadian bacon, or chorizo would be yummy.
  • Cooking Spray
  • Eggs
  • Milk or milk substitute.

  1. In a bowl whisk egg with 1 table spoon of milk or milk sub. You can use up to 2 eggs.
  2. Add veggies and meat, stir.
  3. Spray mug or coffee cup with cookie spray liberally.
  4. Add egg mixture. Microwave for 1:30 minutes for 1 egg, 2:15 minutes for 2 eggs.
  5. Pop the _DIY Mug Omelets_ out of the mug and serve. Easy-peasy.

If you thought DIY Mug Omelets  were easy, _Bunny-cakes_ are even easier. Use your family’s favorite  pancake mix, ours is Birch Benders Gluten Free (check out here & here). With a spoon make a large oval and two small over ear. Add fruit or candy decorations to make a cute little bunny face.
